Chicken Fajita Tacos

Ingredients
2 tablespoons vegetable oil
1 1/2 pounds boneless skinless chicken breasts, cut into
1/4-inch-thick slices
1 onion, thinly sliced
1 red bell pepper, thinly sliced
1 (1-ounce) package taco seasoning mix
Taco-size flour tortillas
Guacamole, sour cream, chopped tomatoes, shredded cheese
Garnish: chopped fresh cilantro
Instructions
In a large skillet, heat vegetable oil over medium-high heat.
Add chicken, onion, pepper, and taco seasoning mix; cook, uncovered, 4 minutes, stirring frequently.
Cover and cook 8 minutes or until chicken is done and vegetables are tender.
Serve with tortillas, guacamole, sour cream, tomatoes, and cheese.
Garnish with cilantro, if desired.
Makes 4 - 6 servings
