Chicken Fajita Tacos

Chicken Fajita Tacos
Ingredients
  1. 2 tablespoons vegetable oil
  2. 1 1/2 pounds boneless skinless chicken breasts, cut into
  3. 1/4-inch-thick slices
  4. 1 onion, thinly sliced
  5. 1 red bell pepper, thinly sliced
  6. 1 (1-ounce) package taco seasoning mix
  7. Taco-size flour tortillas
  8. Guacamole, sour cream, chopped tomatoes, shredded cheese
  9. Garnish: chopped fresh cilantro
Instructions
  1. In a large skillet, heat vegetable oil over medium-high heat.
  2. Add chicken, onion, pepper, and taco seasoning mix; cook, uncovered, 4 minutes, stirring frequently.
  3. Cover and cook 8 minutes or until chicken is done and vegetables are tender.
  4. Serve with tortillas, guacamole, sour cream, tomatoes, and cheese.
  5. Garnish with cilantro, if desired.
Makes 4 - 6 servings
